I am very busy these days and have no time to cook:(
However, I want to make some quick and healthy dinner for my husband and I. Have any suggestions?

Lately, I've been cooking fish. Have you tried the mango marinated mahi-mahi from Costco, in the frozen section? Delicious! Then add a bad of frozen brown rice from Trader Joe's in the microwave. Also green beans, broccoli and cauliflower, all fresh and cut up in bags too at Trader Joe's. A very healthy dinner

Try a chicken avocado salad (basically chicken guacamole): brown/grill chicken breast; dice the chicken, avocado, tomato, shallot/onion, cucumber; toss in a large mixing bowl, add EVOO, lemon juice, S&P and mix well. Add black olives and feta cheese if you feel like more Mediterranean. Serve it as is or on as a sandwich.

Thanks! These are easy recipes that sound very tasty! I will try them this week! Do you guys experiment with different ingredients to come up with these? We should create our own quick recipe online cookbook!

Use your crockpot:

Italian Chicken and Potatoes

4 boneless skinless chicken breasts
1 cup Italian salad dressing
2 tsp. Italian seasoning
1 cup grated parmesan
4 potatoes; peeled, cut into wedges
4 carrots, chopped
(optional) Cut chicken into pieces.

Place chicken in crockpot. Add half the salad dressing, spices and Parmesan. Add potatoes and carrots and add the rest of the salad dressing, spices and Parmesan. Cook on low 6-8 hours.


Karen Carter’s Crockpot Garlic Chicken

1-1 1/2 lbs. chicken pieces
1 c. packed brown sugar
2/3 c. vinegar
1/4 c. lemon-lime soda (7UP diet or regular)
2-3 T. minced garlic
2 T. soy sauce
1 t. pepper

Place chicken in crock pot. Combine other ingredients
and pour over chicken. Cook on low for 6-8 hours.


Crock Pot Beef Stew

1 round steak cut into bite size pieces (about 2 lbs)
1 can diced tomatoes
2 small cans tomato sauce
1 cup water
1 pkg. frozen stew vegetables (or you can use fresh if you have the time)
salt and pepper

Cook in a crock pot, all day, on low.


Crock Pot Italian Beef Subs

3 cups water
1 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon garlic powder or granules
1 (.7 ounce) package Good Season Zest Italian dressing mix
1 (5 pound) beef roast

Combine water with ground black pepper, oregano, basil,
garlic powder, and salad dressing mix in a saucepan. Stir
well, and bring to a boil. Place roast in slow cooker, and
pour the mixture over the meat. Cover, and cook on low
for 10 to 12 hours, or on high for 4 to 5 hours. Shred meat
with a fork and serve on sandwich buns. I also like sautéing
onions and mushrooms to add to the sandwich. You can
also add a piece of provolone cheese to each sandwich.


Slow Cooked Chicken Teriyaki

4 boneless, skinless chicken breasts, cut into pieces
1-1/2 cups teriyaki sauce
2/3 cups brown sugar
1 can pineapple chunks

Combine sauce, brown sugar and juice from pineapple chunks in bowl. Place chicken in crockpot and pour sauce over it. Cook on low for 6 hours. During last hour add the pineapple chunks. Adding them late will keep them from overcooking. Excellent served over rice.

Here is a recipe from my husband's family (they cook a lot, so I joined for my husband lol).

Grape Salad:

1 bag grapes
1 small tub whipped cream
1 small tub sour cream (whipped cream and sour cream are same size)
1 small bag brown sugar
Optional: 1 small bag of sliced/chopped/cut/whatever you feel like (lol) nuts (almonds)

Mix together in large bowl.
It is eaten best when the grapes are cut in half, so you can stab something.

Tip: You don't want the sour cream taste to trump all.

We aren't the type of people that are like 1oz of this 8oz of that. Experiment with measurements if it doesn't taste perfect to you. :) I think the tubs are 8oz though.

This sounds pretty attractive:) Especially we need to add more vegetable to our diet.. I will try it out. The only thing is I may have to use less cream as my husband likes lighter food..
