For a good and easy to make Easter Dinner recipe, I have tried making a very simple roasted leg of lamb. I got the recipe from Rachael Ray's cookbook. It was pretty good! Just want to share it out:)
Ingredients:
For 8 people
- 5 pound boneless leg of lamb
- 1/3 cup of olive oil
- Some zest and juice of 2 lemons
- 5 sprigs of fresh rosemary
- 2 cups of mint leaves
- 1 cup flat leaf parsley leaves
- 1 cup of basil leaves
-1/2 cup of pine nuts
- 1 garlic clove
- 1 slice of bread, toasted and then torn into pieces
Steps:
1) Preheat oven to 450 F
2) Season lamb with salt and pepper
3) Drizzle with some olive oil and coat the lamb
4) Rub top side of meat with lemon zest
5) Put rosemary in the center of meat, then fold the sides over rosemary (wrap around it)
6) Put meat onto a roasting pan and roast for 15 min, reduce the heat to 350 F and roast for another hour. This gives medium to medium rare meat. You can add time to the roasting if you want it to be more cooked.
7) Remove meat from oven, tent with foil, and let it sit for 10 min before slicing.
8) While lamb is roasting, you can prepare the sauce. In a food processor, combine the mint, parsley, basil, pine nuts, garlic, lemon juice, bread pieces, and some salt/pepper. Pulse until well grounded. Add 1/3 cup fo olive oil while the processor is running at slow speed. The mixture should be thick and smooth.
